I have a Diane-ish sauce on here which I've made up over the years. This is a proper recipe by a real chef. It's a really good sauce that doesn't need to many ingredients (or mushrooms, which some do and I didn't have).
Ingredients
25g butter
1 shallot, finely diced
60ml double cream
2 tbsp brandy
1 tbsp Worcestershire sauce
1 heaped tbsp freshly chopped parsley
Salt and pepper to season
Instructions
Heat the butter and allow to melt on a medium heat.
Add the diced shallots and fry for a few mins until translucent.
Add the cream, brandy and Worcestershire sauce and allow the mixture to come to a quick boil.
Add the parsley, salt and pepper, stir.
Place the steaks in the sauce to coat and pour over.
