Nigella's (very easy) Mac & Cheese

This has got to be the easiest thing to make and yes, it's really nice. Going to become a staple week night dish in our house.


Ingredients

 

  • 250g macaroni

  • 250g grated mature cheddar (or red Leicester or mix of both)

  • 250ml evaporated milk

  • 2 large eggs

  • Grating of fresh nutmeg

  • Salt

  • Pepper


Method

 

  1. Preheat the oven to 200°C.

  2. Cook the macaroni, drain and then put back into the hot pan.

  3. Mix the cheese, evaporated milk, eggs and nutmeg in a bowl.

  4. Pour the cheese sauce over the macaroni, stir well, and season with salt and pepper to taste.

  5. Pour into a shallow dish and bake for about 10-15 mins, until bubbling on top.
