One of the quickest pastas you can make and super tasty. A nice change from standard carbonara as pastrami has a bit more kick. Something makes me want to put peas in it next time.

Ingredients
250g pasta
2 cloves garlic, minced
125g Pastrami, sliced into thin strips
2 large eggs
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Method
Cook the pasta until al dente, drain and set aside, saving some of the pasta water.
Heat olive oil in a wide pan.
Add the pastrami and garlic and cook until the pastrami is crispy.
Add the cooked pasta to the skillet with the pastrami and toss to combine.
Whisk together the eggs, cheese, salt and pepper.
Take pan off heat.
Pour the egg mixture over the pasta and toss quickly to coat the pasta evenly.
