This is an excellent alternative side dish. Nice and creamy with a bit of crunch from the breadcrumbs.
Ingredients
250g mascarpone cheese
60ml full fat milk
4 x 15ml tbsp grated Parmesan
Ball of mozzarella, sliced (optional)
Pinch of Black pepper
Pinch of grated nutmeg
1 pack gnocchi
1/2 cup breadcrumbs
2 tbsp butter
Method
Preheat the oven to 180°C.
Whisk the mascarpone in a bowl with the milk, 3 tbsp of the grated parmesan, pepper and nutmeg, stir.
Mix the remaining parmesan with the breadcrumbs and toast in the butter.
Set breadcrumb mix aside to cool.
Cook the gnocchi according to packet instructions.
Drain and add to the sauce, turning them well to coat.
Pour into an oven proof dish.
Place the slices of mozzarella on top (if using).
Sprinkle the breadcrumbs on top.
Bake for 15 mins.
